Date Filled Cookies

1 cup white sugar

1 cup brown sugar

1 cup butter

3 eggs

4 cups flour

1 tsp. soda

1 tsp. vanilla

Cream shortening, add sugar and beat thoroughly. Add flour mixture.

Filling: 1 lb. dates, 1/2 cup water, 1/2 cup sugar

Cook dates, water and sugar until thick and cool.

Roll out dough like jelly roll on a lightly floured surface. Spread with filling and roll. Roll in waxed paper. Chill overnight and cut in 1/4" slices. Bake at 350 degrees F.
