Date-Walnut Honey Bars

Crust

3/4 cup regular oatmeal

3/4 cup sugar

1/2 tsp salt

Blend in food processor until finely chopped.

Add above into large mixing bowl

2 cups flour

Cut in

1 cup butter

until mixture resembles coarse crumbs.

Sprinkle with 1 T. water and blend. Press into bottom of two 9x13-inch pan or one jelly roll size pan.

Filling

3/4 cup honey

3/4 cup apple jelly

1/4 cup butter

1/4 cup brown sugar

1/4 cup flour

1/4 tsp. baking powder

1/2 tsp. salt

4 eggs slightly beaten

1 tsp. vanilla

2 1/2 cups chopped walnuts

2 cups pitted dates

Combine honey, jelly and butter in saucepan. Cook over low heat for 5 minutes. Remove from heat.

In mixing bowl, stir together sugar, flour, baking powder, and salt. Add eggs and vanilla. Beat until smooth. Add honey mixture.

Pour filling over prepared crust(s).

Bake 350° for 25 minutes. Cool.
