Texas Cowboy Bars
Filling
1 cup pitted dates, 8 ounces
1 cup granulated sugar
1 cup water
1 1/2 tsp. finely grated lemon peel
Cut or snip dates into quarters. In heavy saucepan, cook dates, sugar and water over medium heat. Bring to boil. Stir occasionally for 12-15 minutes. Mixture will thicken. Stir in lemon peel. Cool.
Crust
1 1/2 cups flour
1 cup brown sugar
1 1/2 cups oatmeal
1/2 cups walnuts or pecans, chopped
1/2 tsp. salt
1 cup margarine, melted
Mix flour, sugar, oats, nuts and salt in medium bowl. Combine with melted butter. Reserve 1 cup. Press remaining into 8x8 or 9x9 inch greased pan. Spread with filling and sprinkle with reserved crust mixture. Press into even layer. Bake 350° 45 minutes.or until edges bubble. Cool. Refrigerate for easier cutting and removal from pan.
