Apple Raisin Bread
2 package active dry yeast
1 1/2 cups warm water, divided
1 tsp. sugar
3 eggs beaten
1 cup applesauce
1/2 cup honey
1/2 cup vegetable oil
2 tsp. salt
8 to 9 cups flour
1 1/2 cups diced peeled apples
2 T lemon juice
1 1/2 cups raisins
2 T cornmeal
Glaze: 1 egg beaten, sugar
In a small bowl, combine yeast, 1/2 cup water and sugar; set aside. In a large bowl, combine eggs, applesauce, honey, oil, and remaining water; mix well. Stir in yeast mixture. Gradually add enough flour to form a soft dough. Knead on floured surface until smooth and elastic, about 10 minutes.
Place dough in greased bowl. cover and let rise until doubled, about an hour.
In a small bowl combine apples, lemon juice, and raisins. Divide dough into three parts; knead 1/3 of the apple mixture into each part.
Shape each into round flat balls. Place in greased 8-inch round baking pans sprinkled with cornmeal. Cover and let rise until doubled again, about an hour.
Brush each loaf with glaze and sprinkle with sugar.
Bake 350° for 30-35 minutes. Makes 3 loaves.
