English Muffin Loaves

5-6 cups flour

2 pkgs. yeast

1 T. sugar

2 tsp. salt

1/4 tsp. baking soda

2 cups milk

1/2 cup water


Place 4 cups flour, yeast, sugar, salt and baking soda in bowl. Mix to combine with dough hook for one minute or by hand.

Combine milk and water in saucepan. Heat until liquids are very warm (120° - 130°) Gradually add liquid to flour mixture. Mix with dough hook for about 2 minutes.Add additional/remaining flour 1/2 cup at a time. Knead with dough hook for additional 3 minutes. Dough will be very sticky.

Greased generously two small bread pans. Dust with cornmeal. Spread dough evenly between pans. Cover and let rise in warm place for 45 minutes. Bake at 400° for 25 minutes. Remove from pans immediately. Cool.

Great as toast the next day for breakfast.
