Morning Glory Muffins
1 1/4 cup granulated sugar
1/2 cup vegetable oil
3 eggs
2 tsp. vanilla
2 cups flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
2 cups grated carrots
1/2 cup raisins
1/2 cup coconut
1/2 cup diced apple
Nuts optional
Combine sugar, oil, eggs, and vanilla in a large bowl. Set aside. In another bowl combine flour, baking powder, salt and cinnamon. Add to liquid ingredients and stir until moistened. Gently fold/stir in remaining ingredients. Spoon into greased muffin tins 2/3 full. Bake 350° for 20-25 minutes.
