Apple Upside-Down Cake
2 T margarine
1/2 cup brown sugar
1/2 cup chopped pecans
3 medium cooking apples, pared and sliced
2 T. lemon juice
1/2 cup sugar
1/2 tsp. vanilla
2 cups flour
1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/2 cup buttermilk
Preheat oven to 375°
In 9x9-inch square pan, melt 2 tablespoons butter or margarine; spread brown sugar on bottom. Sprinkle with pecans,arrange apple slices; cover with lemon juice.
Cream 1/2 cup margarine and remaining sugars until fluffy and light. Beat in egg and vanilla. Combine remaining dry ingredients; add alternately with buttermilk.
Spread batter over apple slices in pan. Bake 45 minutes. Place on cooling rack 10 minutes, then invert on plate. Serve warm. Top with whipped topping.
