Fruit Pizza
1 roll sugar cookie dough or use your favorite sugar cookie recipe
Stretch to fit a round pan or cake pan. Bake 10-12 minutes, 350°. Do not overbake or the cookie base will be hard and crumble easily.
Cream together
8 oz. cream cheese
1/2 cup sugar
1 tsp. vanilla
Spread over cooled crust
Cover with your choice of fresh or canned fruit. Drain and reserve liquid from canned fruit. Fruit options include: bananas, strawberries, kiwi, pineapple, fruit cocktail, and mandarin oranges.
Mix reserved juice with 2 tablespoons cornstarch. Heat to thicken. Spread over fruit. Refrigerate.
Why would I use a scratch recipe over a labor saving, ready-made roll of cookie dough? Simple. The scratch recipe doesn't break and crumble as easily as the refrigerated dough.
The following is my standard rolled sugar cookie recipe.
3 cups flour
1 tsp. soda
2 tsp. cream of tartar
1 cup butter or 1/2 butter, 1/2 margarine
salt
2 eggs
1 cup sugar
1 tsp. vanilla
Sift flour, soda, tartar and salt. Cream in butter. Beat eggs, add sugar and vanilla. Add to flour. On floured board, roll out dough to a slight 1/4 inch in depth.
