Peaches and Cream Dessert
This recipe, from Janice Neumann of Winsted, won third place in the dessert competition of a bake sale at Holy Trinity Catholic Church during the 1998 Winsted Winter Festival:
3/4 cup flour
1 tsp. baking powder
1/2 cup milk
16 oz. can sliced peaches
1/2 cup sugar
1/2 tsp. cinnamon
3 oz. pkg. regular vanilla pudding
1 beaten egg
3 T. butter, melted
8 oz. cream cheese, softened
1 T. sugar
Stir together flour, pudding mix and baking powder. Combine egg, milk and melted butter. Add to dry ingredients. Mix well; spread in greased 8x8x2" pan. Drain peaches, reserving 1/3 cup liquid. Chop peaches and sprinkle on top of batter.
Beat cream cheese, 1/2 cup sugar and the peach liquid. Pour over peaches. Combine 1 T. sugar and 1/2 tsp. cinnamon. Sprinkle over top. Bake 350° for 45 minutes.
