Asparagus Souffle

8 oz. pkg. frozen cut asparagus, thawed and well drained

1/3 cup finely shredded cheddar cheese

1/3 cup mayonnaise

1/4 cup chopped onion

1 egg white

In a bowl combine the asparagus, cheese, mayonnaise and onion. In a small mixing bowl, beat egg white on medium speed until soft peaks form. Fold into asparagus mixture.

Transfer to a greased 2 1/2 cup baking dish.

Bake, uncovered, 350° for 20-25 minutes or until lightly browned.

Makes two servings.
