Spicy Bean and Beef Pie
1 pound ground beef
2-3 garlic cloves, minced
1 can condensed bean with bacon soup, undiluted
16 ounces chunky picante sauce, divided
1/4 cup cornstarch
1 T fresh parsley
1 tsp. paprika
1 tsp. salt
1/4 tsp. pepper
16 oz. can kidney beans, rinsed and drained
15 oz. can black beans, rinsed and drained
2 cups shredded cheddar cheese, divided
1/2 cup green onions
Pastry for double crust pie
Cook beef and garlic until browned. In large bowl combine soup, 1 cup picante sauce, cornstarch, parsley, paprika, salt and pepper. Fold in beans, 1 1/4 cups cheese, onions and beef mixture. Prepare pastry and line bottom of pan. Fill with mixture and top with remaining pastry crust. Seal edges. Cut slits in top crust.
Bake 425° for 30-35 minutes or until lightly browned. Allow to stand 5 minutes. Top with remaining picante sauce, cheese,sour cream and additional onions optional.
