Country Brunch Skillet

6 bacon strips

5 cups frozen cubed hash brown potatoes

1/4-1/2 cup chopped green pepper

1/4-1/2 cup chopped onion

1/2 tsp. salt

1/4 tsp. pepper

6 eggs

1/2 cup shredded cheddar or American cheese

In a large skillet over medium heat, cook bacon until crisp. Remove bacon, crumble and set aside. Drain. Reserve 2 T. drippings or use vegetable oil. Add potatoes, pepper, onion, salt and pepper. Cook and stir 2 minutes. Cover and cook, stirring occasionally about 15 minutes until potatoes are tender.

Make 6 wells in the potato mixture. Break one egg into each. Cover and cook on low for 8-10 minutes until eggs are set.

Sprinkle with cheese and bacon. Makes 6 servings.
