Chili Blanco

1 lb. dried white beans or 4 cans white beans

6 cups chicken broth

2 chopped onions

1 T. oil

6-8 garlic cloves, minced

7 oz. can diced green chilies

2-3 tsp. cumin

2 tsp. oregano

1 tsp. cayenne

4 cups cooked turkey, diced or 2 lbs. ground turkey

1 cup sour cream

3 cups Monterey Jack cheese

Serve with additional sour cream, green onions, fresh cilantro, chopped tomatoes

If using dried beans, combine with broth and simmer, covered for 2 hours. Reserve liquid. If using canned beans, drain before adding broth.

Saute onions in oil. Add garlic, chilies, cumin, oregano, cayenne and turkey to beans. Simmer 30 minutes. Add sour cream and cheese. Heat until cheese melts.

Serve with additional toppings.
