1 1/2 pounds boneless sirloin steak, cut into thin strips
2 T. cooking oil
2 T. lemon juice
1 clove garlic, minced
1 1/2 tsp. ground cumin
1 tsp. seasoned salt
1/2 tsp. chili powder
1/4-1/2 tsp. crushed red pepper flakes
1 large green pepper, chopped or julienned
1 large onion, chopped or julienned
6-8 flour tortillas, 7-inch
Shredded cheddar cheese, salsa, sour cream lettuce and tomatoes, optional.
Brown meat in oil in skillet. Place steak and drippings in slow cooker. Add lemon juice, garlic, cumin, salt, chili powder and red pepper. Mix well.
Cover and cook on high 21/2 - 3 hours or until meat is tender. Add green pepper and onion and cook additional hour or until vegetables are tender.
Warm tortillas according to package. Spoon on beef and vegetables and add additional toppings.
