German Pancake with Sauteed Apples
1 tsp. vegetable oil
2 large eggs plus whites from 3 large eggs
2/3 cup all-purpose flour
2/3 cup skim milk
Heat oven to 450°. Put oil in 9-inch glass or metal pie pan. Heat in oven 5 minutes. Put remaining ingredients in blender or food processor. Process until well blended and then process another 30 seconds.
Pour batter into hot pan and bake 20 minutes without opening oven. Reduce oven temperature to 350° and bake 10 minutes longer until pancake puffs and sides are crisp.
1 tsp. butter/margarine
6 Granny Smith or Honey Crisp apples, peeled, cored and sliced 1/4 inch thick
3 T brown sugar
1/4 cup apple cider or juice
1 tsp. ground cinnamon
Powdered sugar optional
Melt butter in saute pan. Add apples, sugar, cinnamon and cider and cook until apples are tender stirring often. About 10-12 minutes. Pancake may be dusted with powdered sugar. Spoon in apples. Serve immediately.
