Herb Garden Pasta

Many gardens are bursting with all the ingredients for this quick dish. Skeptical? It can be on the table in 30 minutes. This dish may not be kid friendly, but there is always the exception.

1/2 lb. uncooked pasta, linguine, fettuccine, or spaghetti

2 T. olive oil

1 medium zucchini/summer squash

1 clove garlic, minced

1 bell pepper, yellow or red

1/4 cup red onion, chopped

1 medium tomato, cut into wedges

2 T. chopped fresh basil

2 T. chopped fresh chives

2 T. chopped fresh parsley

salt and pepper

1/4 cup Parmesan cheese

Cook pasta according to directions; drain. While pasta is cooking, heat oil in skillet. Cook zucchini, onion, garlic, and peppers until slighty crisp, stirring occasionally. Add herbs and tomatoes and allow to stand while draining pasta. Combine with cooked pasta. Add seasonings. Pass the Parmesan cheese for those who prefer more. Serves 2.
