Mexican Fiesta Beef
1 pound ground beef
1/2 cup onion, chopped
16 oz. can whole tomatoes, undrained
8 oz. can tomato sauce
1 package taco seasoning
1 can whole kernel corn, drained
15 1/2 oz. kidney beans, drained
3 T. chilies, chopped
1/2 cup sliced olives, if desired
8 oz. corn tortilla chips or nachos
1 cup shredded cheese
Heat oven to 400°. In large skillet brown ground beef and onion. Add tomatoes, sauce and taco seasoning. Simmer 5 minutes. Stir in corn, beans, chilies and olives.
In a greased two quart casserole, alternate layers of chips and meat mixture, ending with meat mixture. Make 3 layers. sprinkle with cheese and arrange a few chips around edge. Bake 15-20 minutes or until heated through and cheese is melted. 4-6 servings.
