Oriental Vegetable Packets

2 cups broccoli florets

2 cups snow peas

Sliced onion

Medium red bell pepper, cut in strips

2 T soy sauce

2 cloves garlic, minced

1 T. vegetable oil or sesame oil

1/2 tsp. minced fresh ginger, optional

1/4 tsp. crushed red pepper flakes, optional

Heavy duty aluminum foil

Preheat oven to 450° or grill on medium-high.

Place vegetables in center of foil. Top with seasonings. Double fold top and ends to seal making one large foil packet. Leave room for heat circulation.

Bake 20-25 minutes on cookie sheet in oven or grill 10-12 minutes in covered grill.
