Pepper Steak with Rice

1 pound lean beef round steak

1 T. paprika

2 T. butter or margarine

2 cloves garlic, minced

1 1/2 cups beef broth

1/2 cup onion, minced

1 green pepper, cut in strips

2 T. cornstarch

1/4 cup each, water and soy sauce

2 large, fresh tomatoes, cut in eighths

3 cups hot cooked rice

Cut meat into 1/4 inch wide strips and cover with paprika and allow to stand while preparing other ingredients.

Using a large skillet, brown meat in butter. Add garlic and broth. Cover and simmer 30 minutes or put in oven at 325°.

Stir in onions and green peppers. Cover and cook until vegetables are tender. Blend cornstarch, water and soy sauce and stir into meat mixture. Cook until clear. Add tomatoes and allow to simmer 1 to 2 minutes.

Serve over beds of fluffy rice. Makes about 6 servings.
