Pumped-up Pecan Pie
2 cups roasted, salted mixed nuts
1 cup dried cranberries
4 large eggs
1/2 cup brown sugar
1/2 cup corn syrup
1/2 pure maple syrup
1/4 cup flour
2 T. butter, melted
9-inch prepared crust
Reserve 1/2 cup nuts and 1/2 cup cranberries in a bowl.
Coarsely chopped remaining nuts and cranberries. Spread evenly in the crust. Whisk remaining ingredients in medium bowl. Pour over nut mixture. Add reserved cranberries and nuts to top.
Bake 50-60 minutes at 350° until set. Cover crust with foil if browning too fast.
