Quick Turkey Casserole

2 cups sliced onions

1/2 tsp. sugar

2 tsp. butter or margarine

2 tsp. oil

3 ounces cream cheese

1 can cream of mushroom soup

2 cups cooked rice

1 1/2 cups cubed cooked turkey

2 T. minced fresh parsley or equivalent dry

1/4 tsp. salt

1/8 tsp. pepper

1/4 cup cornflake crumbs

In a nonstick skillet, cook onions and sugar in butter and oil over low heat for 15-20 minutes or until onions are golden brown, stir frequently.

Combine cream cheese and soup in bowl. Soften in microwave 2 minutes..

Combine all ingredients except onions and cornflakes. Pour into casserole dish. Bake 350° for 20 minutes. Combine cornflakes and onion. Arrange over casserole; sprinkle with paprika. Bake an additional 10 minutes.
