Seafood Asparagus Quiche
1/2 lb. asparagus, trimmed and cut in 1-inch pieces
1/4 cup chopped green onions
2 T butter
1/2 lb. flaked crab meat or imitation crab
1/4 cup chopped parsley
Dash white pepper
8-10-inch unbaked piecrust
1 cup Swiss cheese, shredded
1 1/3 cup half and half
1/2 tsp. salt
1/4 tsp. paprika
1 tsp. Dijon mustard
Preheat oven to 450°. Steam asparagus until tender crisp; drain. Place in piecrust. Saute onions and add meat, parsley, and pepper. Pour into crust. sprinkle cheese over asparagus.
Beat eggs, cream, salt, mustard and paprika. Pour over ingredients in piecrust.
Bake 10 minutes at 450°; reduce heat to 350° and bake an additional 30-25 minutes or until quiche is set. Allow to rest 5 minutes before cutting.
