Mandarin Orange Salad with Poppyseed Dressing
2 T. wine vinegar
1 tsp. Dijon mustard
1/2 tsp. salt
Pinch cayenne pepper
1 T. honey
6 T. oil
1 1/2 tsp. poppyseeds
Salad
1/2 small red onion
11 oz. can Mandarin oranges, drained
Small head lettuce, torn into bite-size pieces or option of 3-4 cups variety of salad greens
Combine dressing ingredients in container with tight seal. Shake well and refrigerate. Peel and slice onions into very thin rings. Combine salad greens, mandarin oranges and onion rings. When ready to serve, pour dressing over salad, and toss.
