Sesame Chicken Pasta Salad
6 ounces uncooked spiral pasta
1/4 cup soy sauce
1/3 cup white wine vinegar or cider vinegar
2 T. canola oil
2 T. sugar
2 T. sesame seeds, toasted
1/2 tsp. salt
1/4 tsp. pepper
3 cups cooked, chopped chicken breast
2 cups torn fresh spinach
1/2 cup sliced green onions
1/4 cup minced parsley
Cook pasta according to directions. Drain pasta and rinse in cold water.
In jar with tight fitting lid, combine soy sauce, vinegar, oil, sugar, sesame seeds, salt and pepper; shake well; place in bowl. Add chicken and half of the dressing, toss to coat. Cover and refrigerate at least four hours. Reserve remaining dressing.
Before serving, add spinach, onions, parsley and remaining dressing.
Makes eight servings.
