Spinach Berry Salad

4 cups torn fresh spinach

1 cup sliced fresh strawberries

1 cup fresh or frozen blueberries

1 small sweet onion, sliced

1/4 cup pecans, toasted

Dressing

2 T white wine or cider vinegar

2 T. balsamic vinegar

2 T. honey

2 tsp. Dijon mustard

1 tsp. curry powder

1/4 tsp. salt

1/8 tsp. pepper

In a large salad bowl, toss together the spinach, berries, onion and pecans.

In a jar with tight fitting lid, combine dressing ingredients. Pour over salad and toss to coat. Serve immediately.
