Springtime Tossed Salad

1/2 cup raspberry juice or cranberry-raspberry juice

3 T white wine vinegar or cider vinegar

1 T olive oil.

8 ounces mixed salad greens

2 cans (11 oz. each), mandarin oranges, drained

1/2 cup crumbled blue cheese

1/4 cup chopped pecans, toasted

In small bowl combine juice, vinegar and olive oil. Refrigerate until serving time. In a large bowl, combine salad greens, oranges and blue cheese. Combine with dressing when serving and sprinkle with pecans.
