Turkey Wild Rice Salad

3/4 cup wild rice

2 cups chicken broth

1 cup water

3/4 cup long-grain white rice

2 cups cooked turkey, diced

3 green onions, sliced

1/4 lb. mushrooms, sliced

Large sweet pepper, diced

3 cups or more spinach leaves

2 T. minced fresh parsley

Combine wild rice, broth and water in medium saucepan. Bring to boil; reduce heat and cover. Simmer 15 minutes. Add long-grain rice to wild rice and continue to cook for another 20-25 minutes until liquid is absorbed. Chill rice.

Combine all salad ingredients: rice, turkey, and vegetables.

In small bowl combine dressing ingredients.

Dressing

1/3 cup wine vinegar

2 T olive oil

2 tsp. sugar

1/2 tsp. dry mustard

1/4 tsp salt or to taste

1/4 tsp. fresh ground pepper

Before serving, toss salad ingredients with dressing. Garnish with mandarin oranges. Smoked turkey or leftover turkey roasted in barbecue kettle is especially good. Serves 6.
