Tomato Celery Soup
2 T chopped onion
2 T butter
1/2 cup finely chopped celery
1 can condensed tomato soup
1 tsp. parsley
1/8 tsp. pepper
1 T lemon juice
1 tsp. sugar
1/4 tsp. salt
1 can water
Saute onion and celery in butter; do not brown. Add tomato soup and remaining ingredients. Simmer 10-20 minutes. Celery will remain firm. May be topped with unsweetened whipped cream and chopped parsley.
