Cream of Broccoli Soup

1 1/2 pounds broccoli

Medium onion, chopped

2 T. butter

1 potato, diced

2 cups (13 3/4 oz. can) chicken broth

1/2 tsp. salt

Dash pepper

1 cup light cream or half and half

1/8 tsp. nutmeg

1 T. flour or cornstarch

Trim broccoli and cook in water 5 minutes. Drain well. Saute onion in butter; add flour, potatoes, chicken broth, salt and pepper. Heat to boiling, then simmer 10 minutes. Add broccoli; simmer 5-10 minutes more. Add 1/2 cup cream, blend, and add remaining 1/2 cup. Heat and serve. Do not boil.
