Turkey Wild Rice Soup
3 10 3/4 oz. cans chicken broth
2 cups water
1/2 cup wild rice, uncooked
1/2 cup green onion, finely chopped
1/2 cup margarine
1/2 cup flour
1/2 tsp. salt
1/4 tsp. poultry seasoning
1/8 tsp. pepper
2 cups half and half
1 1/2 cups turkey cooked and cubed
8 sliced bacon, cooked crisp
1 T pimento, chopped
2-3 T. dry sherry
In a large saucepan, combine broth and water. Add rice that has been rinsed and onion. Bring to boil. Reduce heat, cover and simmer 35-40 minutes, until rice is tender. Melt margarine, stir in flour, salt, poultry seasoning and pepper. Cook 1 minute, stirring constantly until smooth and bubbly. Gradually stir in 1/2 and 1/2, cook until thickened, stirring constantly. Add remaining ingredients. Heat gently. Stir frequently. Do not boil.
* 6 cups chicken broth may be substituted instead of canned broth.
