Rice Pilaf
2 T. butter or margarine
2 T. onion
1/4 cup celery
1/4 cup chopped/shredded carrots
2 cups chicken broth
1 cup rice, white, brown, or wild or any combination
1/2 cup mushrooms, fresh or canned
1 T. parsley, fresh or dried
1/4 tsp. black pepper
1/4 tsp. sage
Saute vegetables in margarine. Add broth and rice and heat to boiling. Pour into 2 quart casserole. Cover and bake 25-50 minutes depending on choice of rice.
